There was a lot of cities to visit and I felt there were many hours on the coach. Maybe the schedule could be adjusted so we didn't backtrack between cities.

Overall the trip was a good one and tried to accommodate various ages. It also tried to include as many cities as possible. Here are my suggestions:
1) Really focus on quality of food. Given that it is Italy I expected a min quality of food. Many times the quality was subpar... felt like cafeteria food even when we were paying 70 euros for it. Moreover, people who asked for vegan or vegetarian really struggled.
2) Less is more: Instead of stopping for 2 -4 hrs at a location, maybe cut the location and spend more time in the final destination.
3) Create a mobile app where we can simply click the options we want and it automatically takes the payment instead of tour guide asking us to fill paper forms a couple of times.
