I am glad to say that I did the Dolpo after a few friends recommended me. Booking with the operator was an easy process and they replied to all my queries on email instantly. We can highly recommend doing this Trek. It is a tough hiking trek (since you will be at very high altitudes for multiple days in a row) but the views make up for it - the landscape is stunning. Our Guide (Sanchaman Rai) explained a lot and did his best so that we felt always safe and secure. When we could not finish the first pass (Kongma La) - Sanchaman adjusted our plan so that we could do the other two passes, even though we lost a day. All in all it was a great trek with a great tour agency. (Hint: If you think about doing the Trek in less than 16Days - it may be possible, but make sure that you acclimatize correctly otherwise you will not enjoy the experience :-). In our opinion 16 Days is the perfekt amount of time).

Without the dust in Rajastan India is indeed a great destination not only for Westerners but anyone interested in East Indian cultures and traditions. Food was good but a little too salty for my tastebuds. In southern India food not as salty but also very good. I plan at some later time to revisit India but be a little more prepared to deal with the dust and the northern weather in January.
