Santa Cruz is the economic capital of Bolivia: a real mushroom city organized in concentric circles, where you can see gleaming 4x4s crossing donkey carts, it is a city full of contrasts. Its small historical centre is not lacking in charm, and there's no shortage of specialities!
You've probably already been offered one on several occasions, as you leave your hotel or on a street corner; certainly the most common snack, the cuñape. A cuñape is a round bread roll made from manioc flour (known here as yuca) and filled with cheese, which is eaten while still warm.
Still feeling peckish? Perhaps you'd prefer the sonso, also very popular; made from cooked yuca and mixed with cheese, all wrapped around a wooden stick and cooked as if on a spit, right on the coals.
